This stunning dish takes a mere 15 minutes to prepare, including prep time, and requires just five ingredients.
Here's the recipe for Gino D'Acampo's pastaIngredients
- (Serves four)
- 500g dried spaghetti
- 100ml extra virgin olive oil
- Five cloves of garlic, peeled and finely sliced
- One large bunch of parsley, stalks removed, leaves finely chopped
- Two tsp dried chilli flakes
- One fresh red chilli, finely sliced – seeds left in.
Method
Before you start cooking, Gino has one crucial tip. "When you do this recipe, chefs will say to you 'put the oil in a pan, put it on the heat, when oil is hot add ingredients'."
"We are not doing this when we do aglio olio e peperoncino [garlic, oil and hot pepper] because otherwise the garlic will burn. The way we do it is put oil in the pan cold - this is a good tip, so remember - oil goes in cold."
Now, onto the method. Bring a large pot of water to the boil. When boiling add a good pinch of salt. Boil your spaghetti for one minute less than the packaging suggests to ensure al dente cooking.

Get your pan ready, drizzle in some extra virgin olive oil, and toss in garlic, parsley, a good sprinkle of chilli flakes and some freshly sliced chilli.
Crank up the heat to medium-high, give it a stir and let the sizzling symphony work its magic for a minute before pulling it off the stove. Meanwhile, your spaghetti should be perfectly al dente - time to marry it with the spicy oil mix over medium heat, letting it twirl and dance in the pan for 30 seconds to soak up all those robust flavours.
And there you have it – a simple yet show-stopping meal ready to wow your taste buds. Serve it piping hot, and you've nailed it – voila! Now, if Gino has got you hooked with his straightforward culinary delights, why not dive into another classic?

Gino passionately shares: "To Italians nothing is more important than family and food. In this series I want you to see Italian food through my eyes for its simple ingredients, impressive results and fantastic flavours."
