Whipping up a cheap but utterly delicious courgette bake is a excellent

Blogger Penny Ritson revealed on Penny's Recipes that garden-fresh courgettes can be snagged for under a quid in most and go beautifully with simple staples like onions and carrots. Sharing her culinary secrets, Penny said: "Courgettes (or zucchini) are in season in late summer and yet they are available at quite a low price all year round in the supermarket.

"This courgette bake is very easy to make and is prepared in minutes to bake in the oven. Made with vegetables, eggs and cheese it is very tasty too!" The reportedly sets you back around £4 for four servings - a mere pound per portion, depending on where you shop for groceries.

Ingredients
  • 375g courgette, grated
  • 125g mature cheddar cheese, grated
  • 125g self-raising flour
  • Five eggs
  • Two rashers of bacon cut into small pieces (optional)
  • One onion, diced
  • One carrot, grated
  • One teaspoon dry mustard powder (optional)
Method

When it comes to crafting this savoury treat, essentials include a trusty pie dish for an even bake without any of that annoying sticking.

First things first, get your hands on one fitting for a four-person feast and butter it up properly. With your dish all set, crank up the oven to 180C before getting stuck into the mix, The trickiest part?

Grating the veg – but keep it consistent for even cooking. Toss the grated goodness into a sizeable bowl, whisk in the eggs, and gradually incorporate smoothly sifted flour, lastly folding through the grated cheese and a punch of mustard powder.

Pop your pie in the oven for 40 to 45 minutes until it's perfectly cooked, and if you fancy an extra cheesy kick, sprinkle some on top. Penny dished out her tips saying: "Serve with a baked potato as they can be baked alongside the courgette slice or your favourite vegetables. It is very easy to cook and very tasty as well as being suitable for home freezing."
