Recipe for Shahi Bhindi with Ghee Chapati

Shahi Bhindi is a rich and flavorful dish that brings a royal touch to everyday meals. Paired with ghee chapati, this recipe is both delicious and nutritious, offering a perfect balance of textures and flavors.

Ingredients for Shahi Bhindi:
● 250 grams of bhindi (okra)


● 2 tablespoons oil
● 1 tablespoon ghee

● 1 onion (finely chopped)
● 2 tomatoes (pureed)
● 1 tablespoon ginger-garlic paste
● ½ cup yogurt (whisked)
● 2 tablespoons fresh cream
● ½ teaspoon cumin seeds
● 1 teaspoon garam masala
● 1 teaspoon turmeric powder
● 1 teaspoon red chili powder
● 1 tablespoon coriander powder
● Salt to taste
● Fresh coriander leaves for garnish

Ingredients for Ghee Chapati:
● 2 cups whole wheat flour
● 2 tablespoons ghee (clarified butter)
● Water as needed
● Salt to taste

Method for Shahi Bhindi:
1. Preparation: Wash and dry the bhindi. Cut off the ends and slice it lengthwise.

2. Cooking Bhindi: Heat 1 tablespoon of oil in a pan and fry the bhindi until lightly crispy. Remove and set aside.

3. Sautéing Onions and Spices: In the same pan, add 1 tablespoon of ghee and cumin seeds. When the cumin crackles, add the onions and sauté until golden brown. Add the ginger-garlic paste and cook until the raw aroma disappears.

4. Tomato and Yogurt Base: Pour the tomato puree into the pan and cook until the oil separates. Add the yogurt, stirring continuously to avoid curdling. Cook for 2 minutes.

5. Adding Spices and Cream: Add turmeric, red chili powder, coriander powder, and garam masala. Stir well and cook until the spices are well mixed. Add the fresh cream for a rich texture.

6. Mixing Bhindi: Add the fried bhindi into the gravy and stir gently. Simmer for 5 minutes, allowing the flavors to blend.

7. Garnishing: Garnish with fresh coriander leaves and serve hot with ghee chapati.

Method for Ghee Chapati:
1. Dough Preparation: In a mixing bowl, add wheat flour, salt, and ghee. Mix well. Slowly add water to form a soft dough. Let it rest for 15 minutes.

2. Rolling Chapatis: Take small portions of the dough and roll them into round chapatis.

3. Cooking Chapatis: Heat a tawa (griddle), cook the chapati on both sides, and brush ghee on the top. Repeat for the remaining dough.
